While these unsightly marks don’t necessarily affect the quality of the product, they are visually unappealing to consumers, often leading to rejection.
While temperature protection for transporting chocolates helps stabilise these states, any protective solution must also deal with chocolate’s other enemy: water. Exposure to a little moisture – such as humidity – isn’t usually a major issue. However, exposure to droplets can often ruin intricate chocolate designs.
